Seafood dishes worth ordering at Wild Rocket Roast Snapper With Otah Sauce & Brussels Sprouts -- ST photo

One thing I wish I could do more of is to go back to restaurants I like. But there are always new ones to try out for work.

Still, I make it back to Wild Rocket with some friends who have not been in years. It is good timing too, since the restaurant, run by chef Willin Low, has just put out a new menu.

Three dishes are worth ordering. The Mixed Seafood Ceviche has a decidedly Asian accent. Salmon, prawns and octopus are tossed in a spicy sambal and topped with whipped coconut cream and shrimp fat. If it gets too spicy, there's the coconut cream to cool the tongue.

Another new offering uses a fish called Bombay Duck. The dish, Bombil Tempura, comes with a flavourful Japanese curry and is served with pickled daikon. Crisp, greaseless fish goes really well with the mild curry and the pickles provide a bit of an edge.

The other one I really like is Roast Snapper With Otah Sauce & Brussels Sprouts.

The fish is cooked perfectly - crisp skin, flaky flesh and it sits on a spicy otah paste aromatic with kaffir lime leaves. Brussel sprouts are a strange accompaniment. I think sugar snap peas, with their crunch, might be better. But all of us mop up the otah sauce with chunks of bread until the plates are wiped clean.
